The Mini Pork kebabs are a nice light started cooked in a North African spice mix, followed by the hearty Chicken with Red Pepper and Cashew Nuts. This is a colourful dish that looks great and tastes great as well.

Aubergine & Red Pepper Soup, and
Roasted chicken with Sherry & Capers

This Soup does a great service to the subtly taste of the Aubergine, bringing through that vegetable flavour with a splash of sweetness from the Red Pepper. This Roasted Chicken is a particluar favourite of mine, the sherry and cappers really add that extra taste factor to this great Spanish dish.

Peach Salad with Palma Ham & Mozzarella, and
Fresh Salmon in Mojo Sauce

The Peach Salad with Palma Ham and Mozarella was a dish I became familiar with on a sailing trip in the Mediterranean a couple of years ago. After a heavy breakfast and before the rich authentic evening meal a light lunch was needed and this did just the job. The peach' sweetness mixed with the salty ham and the Mediterranean subtly of the mozzarella combine to make a sublime dish. Continuing the light theme the Salmon with the Sweet and gently Spiced mojo sauce bringing a tasty combination for the main meal.

Slow Cooked Lamb Shanks with Potato & Celeriac Mash and
Lemon Flan with Raspberries & Coconut

Slow Cooked Lamb Shanks are a real treat for the family, the lamb simply falls of the bone and is one of the most succulent meat dishes I have ever tried. The Lemon Flan does a great job to add that light and sweet taste with fresh Raspberries and Coconut.

Butter Bean Squash & Apricot Crumble and
Nectarine Brûlée

The Butter Bean Squash is a great alternative to a meat dish and is actually vegan. However don't let this put you off as Vegan's and Non Vegans alike have given some great feedback on this rich and very homely tasting dish. The Nectarine Brûlée is a real pudding treat, the melted sugar mixed with the fresh fruit makes a truly delicious desert.

Roast Squash with Young Spinach leaves and
Mediterranean Beef & Pimento Casserole and
Florida Key Lime Pie

The Roast Squash with Young Spinach leaves is a delightful dish, starting the meal with a healthy and flavoursome start. The Mediterranean Beef & Pimento Casserole is a great combination of the beef cooked with the rich pimento pepper and seasoned to taste with cumin, paprika and sun dried tomatoes. To give a tasty finish the Florida Key Lime Pie pays tribute to an American classic.

Humous with Red Pepper and Chilli with Warm Pitta Bread and
Braised Moroccan Lamb with Sumac and Couscous and
Baklava with Pistachio Nut Topping

Hummus and Warm Pitta Bread make a great start to any social gathering, and with the addition of red pepper and Chilli this particular version has a little kick to it. Following the spicy theme the Braised Moroccan Lamb is just the dish with it's special North African spice mix served with Couscous. For pudding I have gone North to the Mediterranean, Baklava, a lovely sweet dish filled with Almonds, Walnuts, and of course Pistachio nuts.

Roast Peppers with Artichoke Hearts and
Butter Bean & Tomato Tagine and
Spicy Caribbean Rice Pudding

This particular 3 course meal is a Vegan special and again I have had some great responses from Non Vegan's and Vegan's alike about all three of these dishes. The Roast Peppers with Artichoke Hearts is lovely starter followed by an all vegetable version of a North African Tagine. This is then finished with the Sweet and Spicy Caribbean Rice Pudding.

Chicken Satay is a household favourite and is always the first to go at any Buffet I cater for, a nice light start. To follow the Crab Dumplings have a great delicacy to them and taste great with the Rice Wine and Soy Dipping Sauce. For a more wholesome main I have chosen the Slow Roast Belly of Pork, and go with this dish I have following the traditional sweet accompaniment but this time with a honey and mango sauce, a lovely twist on an old theme. Following the main course will be the Spicy Chef cheese board, a variety of cheese's hand picked for personal taste accompanied by Spicy Chef Hand made relishes including, Mango relish, Lime Pickle, Piccalilli and the famous
